                                            Chicken Enchiladas                  salsa made on the Oct. 2011
                                            ●  1 whole chicken (I like to       legendary rhythm & blues cruise!

                                            ●  2 (8 oz) bags of shredded
                                               Mexican blend cheese             ●  1 tomato diced
                                            ●  12 white corn tortillas          ●  1-1/2 cups mangoes, diced
                                            ●  2 (10 oz) cans Old El Paso       ●  1 cup red onion, fi nely diced
                                               green enchilada sauce            ●  1 cup red bell pepper, fi nely diced
                                            ●  ¼ cup vegetable oil              ●  3 - 4 jalapeno peppers, fi nely diced
                                            ●  Salt to taste                    ●  2 tbsp red wine vinegar
                                            ●  Pepper to taste                  ●  1 lime (juice and zest)
                                            ●  Cayenne pepper to taste          ●  1 tbsp cilantro, fi nely minced
